Carol Ann Simon

Carol Ann Simon, 72, of Cambridge, formerly of South Saint Paul, passed away Wednesday, October 31, 2012 at the Haven House Assisted Living in Cambridge.

Carol was born Oct. 4, 1940 to parents Walter and Winifred (Harvey) Tauer in St. Paul, Minn. She grew up in South St. Paul, attending St. Matthew’s elementary school and graduated from South Saint Paul High School in 1958.

Carol was united in marriage to Frank Donald Simon Jr. on Feb. 8, 1958. The couple was blessed with the birth of their first child, James, in September of 1958. Carol worked for a short time at Pearson Candy in St. Paul, but quit after the family continue to grow with the births of more children, Tim, Joan, Bob, Steven, Tom and Terry. Once the children were older, Carol attended St. Mary’s University in Minneapolis, receiving her Nursing Degree in 1972. Carol began her career as a Registered Nurse at the Devine Redeemer Hospital. She worked as an emergency room nurse for 6 years before accepting a position at the Cambridge Medical Center as the first overnight ER Nurse. Carol and Frank purchased a farm in Stanchfield and moved the family in March of 1978. Carol continued to work at the Cambridge Hospital until she took an early retirement in 1997. Carol and Frank then partnered with their son Bob to purchase and run the Pine Loft restaurant in Princeton. Carol worked all jobs at the restaurant from hostess to prep-cook. Diners would come specifically for her fresh baked cookies. In 2001, due to declining health, Carol retired again and she and Frank purchased a home in Arizona to spend winters in the warmer climate. In 2011 Carol’s health further declined and she became a resident of GracePointe Crossing until September of 2012 when she made her final home at the Haven House in Cambridge with Frank always at her side.

Carol was an extremely creative person with big ideas. She always loved to try new craft projects—some successful and others not. She was always happy to have any family member, willing or not, to join in on the current project. She was an accomplished seamstress, making clothes for her children, quilts for Christmas and wedding gifts and pajamas for her grandchildren. Carol loved to decorate for the holidays.  She made many Halloween costumes and Christmas ornaments for her family. Carol was a wonderful cook and always had a treat of cinnamon or caramel rolls or chocolate chip cookies prepared for the next person who stopped in. She loved having her family together and would always prepare a huge meal for get-togethers. She will be dearly missed by her many family and friends.

Carol is preceded in death by her father Walter Tauer, mother Winifred Karas; step-father Thomas Karas; and son James Simon.

She is survived by her husband Frank of Cambridge, children Tim (Melissa) of Woodbury, Joan Monack of New Richmond, Wis., Bob (Cindy) of Cambridge, Steve of Eau Clare, Wis., Tom of Cambridge, and Terry (Gayle) of Victoria; brothers David (Rosemary) Tauer of Braham, and Donald (Joan) Tauer of Lake Elmo; sisters Jean (Jim) Bleeker of So. St. Paul, and Nancy (Don) Englund of Amery, Wis.; 22 grandchildren and 6 great grandchildren; many other relatives and friends.

A Funeral Service was held Sunday, November 4, 2012 at the Sts. Peter and Paul Catholic Church of Braham with Fr. Nicholas Zimmer, Deacon Tom Pinataro and Deacon Gene Kramer officiating. Casket Bearers were Travis Simon, Jordan Simon, Brad Monack, Spencer Simon, Elliott Simon, Eric Simon and Nathan Simon. Music was provided by Joni Nelson. Inurnment will be held at a later date at the Sts. Peter and Paul Catholic Cemetery in Braham. Arrangements are by the Rock Ingebrand Funeral Home of Braham.
